Let’s start with what Sourdough Discard is? Sourdough discard is the portion of starter that gets removed as part of routine maintenance and feedings. This portion of the starter is not active so it will not help your dough rise and you can choose to dispose of it or bake with it. Sourdough Discard is just as precious to me as active starter.
Using Sourdough Discard is so easy because there is no waiting time to mixing up a recipe and adding sourdough to the recipes adds a complexity of flavor and is super moist. You will have discard each week as you feed your starter. I keep a seperate jar in the fridge and add to its every time I do a feeding.

- Sourdough Pancakes – We have not bought pancake mix in over a year. We use this process to save the “mix” and then we mix the wet ingredients in the morning. This recipe makes a good number of pancakes so we freeze the extras for future breakfast.
- Sourdough Waffles – I make a triple batch once a month and freeze them. I make the recipe as is but I do not add the cinnamon sugar. We simply pop them in the toaster for breakfast before school.
- Crackers – These are so easy and will absolutely blow friends away that you could make these. Especially awesome with charcuterie. Feel free to add in your favorite herbs or seasoning to these. If you want to double this recipe I recommend making 2 separate trays vs. adding to one.
- Blueberry Bread – this is so fantastic and moist, great for breakfast. My entire family loves it.
- Naan – this is so quick and easy and will elevate any home greek dish you are making.
- Brownies – Melting your own chocolate and mixing moist discard into these makes them so decadent.
- Zucchini Fritters– if you have your own garden and have zucchini coming out your ears these are fantastic.
- Cornbread – This is so easy and absolutely elevates any dinner. it’s quick and easy to make.
